Cooking, pescatarian, and almost getting hit by a scooter

Morning Time May 1st

Ummm can we not talk about how I knew today was May 1st and I still forgot to reload my monthly pass 

:| 

And can we not talk about how I didn’t post yesterday…

But we can talk about how 

Number one: I took a yoga class and in the midst of it I asked myself, “why am I here? Why did I sign up for this?” 

I wanted to leave but I didn’t! And because of that my hips feel much better 

They have been aching for the past week or two because I’ve been walking everywhere and then introduced myself to Pilates again with no stretching in between 

:/

I finally figured out what other things imma write about. I’m gonna write about things that don’t revolve around regular megular life

Cooking!!!

Concerts!!!

I don’t have anything else that starts with a C.

I may talk about Reiki 

I found out my God Sister is practicing to be certified and I may get a session 

Very very interesting 

I did some research on it. It’s all about energy… that’s what the research basically said. Some doctors in hospitals use it for patients with chronic pain, people who are grieving, people who are working on their mental health etc, etc 

I’m nervous but I wanna take a go at it to see how that how it feels and does it feels like days after. It’ll be reiki over the phone. 

I read that it’s still legit because energy transcends. 

I’ll tell ya about the experience 

Okay to cooking 

Pause. 

I paused to sing Keke’s part of My First Love. I swear I wasn’t on my phone… I almost got hit by a scooter. He was trying to figure out which way to go and I panicked and I just stoped and slightly screamed.

My mom got hit by a bike and I just feel it’s gonna happen to me. It may not be genetic, but in some ways we are very similar and that is included.

Okay so yes cooking 

I am a huge Gordon Ramsey fan!!! I have watched the UK version of Kitchen Nightmares and the very early seasons of Hells Kitchen. I wasn’t there at the beginning beginning but I was there. 

I also used to watch the cooking show where top chefs would cook against each other. I think it’s called Iron Chef. 

Cooking has been something that excites me. 

I learned how to make eggs and French toast. I made it so much it became my speciality. 

When I studied aboard in Rome for a semester I had to cook for myself. 

And it was rough. 

My speciality never changed from middle school to high school. I wasn’t cooking next to my mom. I was the person talking to her while she was in the kitchen. At times I would help cut the vegetables. That was my job. Now I’m over seas and have to cook for myself 

Woof. (Yes I watch Shrinking. It’s so good and surprisingly hilarious)

Therefore some of my meals were disgusting,over cooked, and pre seasoned. 

One time I made stir fry with eggs and my goodness it smelt so bad. Even though it smelled by it taste THAT BAD. Put some sweet and sour sauce it. Bon appétit.

When I moved with my former roommate I tried to level up my cooking skills. Tried to make fried chicken but it was never fucking cooked all the way! Every time it was red in the middle. Yes, at times I did eat it. Chicken is fucking expensive.

I made hamburger helper and that was THE MOST DISGUSTING thing I have ever made! Doesn’t even come close to the lemon pepper chicken wings I tried to make with my mom. Too much lemon. 

I couldn’t figure out how to make fried chicken so I switched it up and pan cooked it. 

I don’t cook beef.

Only eat pork on holidays

Turkey was my go-to for everything!!!!! But I was having the hardest time seasoning it. It would taste so bland. You have to heavily season turkey. Half of the bottom is damn near gone. 

Then seafood LOVEEEEEEEE 

Since I wasn’t eating chicken at home it was easy to let it go. Plus I had this conversation with this guy that questioned… “How come every store sells chicken?” Some of that chicken you need to be side-eyeing. Then he started to talk about mucus and shit and I was like you’re right. 

Stopped that shit cold turkey. 

Thoughts of becoming a pescatarian have always swum in my mind. My cousin is one and I had thoughts of being a vegetarian when I was younger but who gonna buy me the produce sooooooooo

Gave myself a challenge to only eat seafood and vegetables. Was very easy in the beginning because I was excited! 

I brought Tabitha Brown’s cookbook. Got a new pescatarian book from the library! I was shopping at Whole Foods. I was in my fucking bag. 

I started to enjoy cooking for the first time. I started doing cooking classes on my Instagram. Ain’t nobody ask for the shit lmao but I enjoyed it so yea. Then after a while, people started to comment. Lmao

Only eating seafood and vegetables has really helped me with controlling my acne. I started to realize that when I would eat chicken or beef I would get a pimple the next day. No lie! 

I even lowered the amount of candy and sugary things I would eat. I also stopped eating eggs and dairy and that has REALLY BEEN THE TOPPER! 

My dermatologist told me I had to stop eating dairy. 

The day before… I had cooked chicken quesadillas 

Pissed wasn’t even the word. 

I wanted to finish them so bad but I didn’t because I wanted my skin to get better. 

I scrapped off as much cheese as I could 

I was not letting all that chicken go. 

Chicken is expensive 

Healthy quick means being available is the only bad side I’ve had so far. When I don’t feel like cooking I eat a lot of fish. Not really good because that can last for a whole week.

One of my favorite recipes is a pita chickpea pickled onion cauliflower gyro. 

You use obviously chickpeas, red wine to make the pickled onion, chipotle peppers and vegan yogurt to make the sauce, and lettuce for a nice crunch. 

Have to bake the chickpeas in the oven until they are a bit soft. Have the onions in the red wine for about 30 minutes or so. Longer is better. Put that thang on that bread omg delicious 

Ahh, I forgot you also roast the cauliflower. Roast it until it’s brown. 

It’s so delicious 

I just made vegan stuff with bell peppers. Showed that process on my Instagram. 

I like red and yellow bell peppers, tomato paste, white beans, cumin, garlic, jalapeno peppers, cilantro, peppers, water, and cornstarch. 

I was nervous about the white beans because I just got used to black beans… but the white beans don’t taste like anything in the sauce 

Was delicious 

All of that to say lol

Now when I have the energy I like to cook something new and introduce something new to my taste buds. 

So yup. 

Cooking. 

It’s something I really enjoy. It excites me.
